South Beach Diet Day 4: The Second Helping Queen

I have no idea if the diet is working. It's too early to tell anyway. Mom says that the scale says she's 3 pounds lighter, but she also said that doesn't really matter because a person's weight is supposed to fluctuate +/- 3lbs.

I felt like a bad daughter the other day. Monday, on my way home from work, Mom called me to remind me to buy some eggs at the store for her lunch the next day.

Cell phone rings.

Laura: Hello?

Mom: Hey Laura! I need you to buy me a dozen eggs.

Laura: Why? Is it in the diet? It doesn't say egg substitute?

Mom: Of course not! I get to eat eggs tomorrow. Real eggs. Yay!

So of course, what did I forget to buy? Eggs. I bought everything else she told me to buy. I felt so bad. I even remembered to buy eggplant but not eggs. Argh. I bought the eggs yesterday though, so she was able to have real eggs today :-).

Mom says she's not going to lose weight. I'm inclined to agree. Why? The recipes we make all say Serves 4 or Serves 6. Between the two of us, we can eat it all. Well, as long as her cholesterol goes down, right?

Another reason why the diet may not work as well as it should is all the substituting that Mom's been doing. It's like approximating measurements in cooking. It's hard for me not to measure things. It's neat that other people can do that, but I'm not one of those people. The quantities are there so everything doesn't taste like soy sauce (which is what usually happens whenever try any recipes requiring soy sauce and I don't measure it.)

Well anyway, tomorrow's lunch is supposed to be grilled hamburger steak (no bun) and some other stuff. Since we didn't buy any hamburger steak the last time we went grocery shopping, Mom's just going to have a salad with some Canadian bacon instead. That's just an example. She does other substituting too, here and there. Salad instead of broiled tomatoes, asparagus instead of cauliflower, a sugar free gelatin dessert instead of the ricotta creme. It doesn't sound bad, but it just edges me a little off kilter, you know? Bah!

Well, anyway, the diet is going good for Mom. She says she's not hungry (she's the second helping queen :-D) and I eat lunch with Dad (we had Mexican food today) so I guess in the grand scheme of our household, all is right with the world...so far.
